I can't double click the component like you did?! Nothing happens when I double click the component and I've even tried right clicking the component in the library to see if the Edit option is available ... but it is grayed out.

It should work just fine in Flash CS3. Try making sure you are using an ActionScript 3.0 Flash File and not ActionScript 2.0. ActionScript 2.0 Components don't support double click editing. Hope that helps!

i am playing around with the things seen in your tutorial, but one thing i can't seem to be able to achieve: how do i use an existing image (psd, jpg whatever; imported into library) as a scrollbar thumb icon? everytime i try, the image is blown out of proportion (stretched vertically bad time).
help - this could make my year!

It should work ok if you just put that image inside of a Movie Clip symbol. That's the solution to tons of problems in Flash.
